There are Australian giant lobsters and sea urchins in the fish market, and there are services for processing them on behalf of customers. The apartment we lived in was very close to the fish market. So we had the giant lobster processed and took it back to the apartment to eat. It really tasted great, and there was a big difference compared to the lobsters we ate in China. The sea urchins were also very fresh. I just took a bite of it, but I couldn't stand the taste of mustard, so I didn't eat any more.
